L'aperitivo is the drink before dinner, usually around seven, and it nearly always comes with something to nibble.
In Milan the snacks can be a whole buffet — which is how the word apericena, aperitivo plus dinner, was invented.
In Bologna the plate comes piled with mortadella, squacquerone cheese and warm piadina, and everybody helps themselves.
At aperitivo time in Bologna, out comes mortadella — the big pink sausage flecked with white — cut in ribbons so thin you can see through them.
