Olive groves in Tuscany

Did you know?

The Tuscan countryside is olive trees, vineyards and rows of dark green cypress trees planted along the driveways of old farms.

Olives are picked in late autumn and pressed within a day or two โ€” new oil is bright green and peppery in your throat.

Further north, the flat fields of Emilia-Romagna do a different job: hay for the cows whose milk becomes Parmigiano Reggiano, and hills above Parma where the hams hang to dry.

Parmigiano Reggiano comes from the fields between Parma and Reggio. Each wheel weighs about as much as a big dog and rests for a year or more before anyone tastes it.
