Pizza margherita comes from Naples, and its colours are the Italian flag: red tomato, white mozzarella, green basil.
A true Neapolitan pizza cooks in a wood oven at about 450°C for only 60 to 90 seconds — quicker than you can tidy your room.

Bologna's famous sauce is ragù (don't call it bolognese here!) cooked so slowly the whole house smells of it. In Bologna it goes on flat tagliatelle, never on spaghetti!
